Strategies for Fun and Accessible Cooking: Peanut Butter Perfection

Many people who have lost vision later in life tell me one of the hard parts is that their cakes and muffins, as well as other cooking projects, do not look as good as when they could see.  One friend even said she wasn’t going to bake anymore because it just didn’t meet her standards for visual perfection.

Since I’ve been blind from birth, it doesn’t bug me much that there may be a little blob of dough on the edge of the muffin cup, but then I’m more likely to bake a little loaf of banana bread instead of muffins; it’s quicker anyway.  I highly recommend baking cookies instead of fooling with frosting a cake.  Here is the world’s simplest and best peanut butter cookie recipe.

There really are only four ingredients!

Peanut Butter Cookies

Ingredients and Instructions:

Combine one 16-ounce jar of peanut butter (your choice of crunchy or smooth) with 2 cups of sugar, half a cup of flour and two eggs.

Mix and make into 24 walnut-sized balls.

Place on an ungreased cookie sheet.

Bake at 350 degrees for about 15 minutes.


Take these to a party and I guarantee you will be invited again!
